Vendakkai Poriyal - Lady's finger – Okra- bhindi recipe

Ingredients
  •  Lady's finger/vendakkai- 1/2 kg  
  •  Turmeric powder - a pinch
  •  Kashmiri chilli Powder – 2 tsp (adjust)
  •  Salt  
 For the seasoning
  •    Oil - 3 tbsp
  •    Mustard seeds - 1 tsp
  •    Channa dal - 1/2 tsp
  •    Curry leaves – few
  •    Red chilli - 1
Preparation
  • Wash and wipe ladies finger well with a clean cloth. Then cut off the top and bottom, now cut it into small pieces and keep aside.
  • Heat the pan with oil, add mustard, when it splits, add channa dal, red chilli and curry leaves, saute till dal turns light brown colour.
  • Now add the lady's finger cover and cook in medium flame.
  • After 5 mins, add turmeric powder, chilli powder and salt and cook till it changes colour. Mix very carefully, otherwise it gets smashed (sticky).
  • Keep stirring it until gets crispy in low flame.  
  • Ready to serve South Indian special Vendakkai Poriyal with sambar, rasam and curd rice
