Mixed Vegetable Kurma - Korma recipes

Ingredients
  • Oil – 1tbsp
  • Bay leaf - 1
  • Big onion – 1 sliced
  • Tomato - 1 small sliced
  • Coriander leaves few
  • Curry leaves few
  • Salt to taste
  • Carrots, beans, potatoes, peas – mixed 1 or 1 1/2 cup
For the raw ground paste 
  • Fresh shredded coconut – 1/2 cup
  • Cashews – 4
  • Garlic – 4
  • Ginger – 1 inch
  • Clove - 1
  • Fennel seed – 2tbsp
  • Cumin seed – 2tbsp
  • Cardamom - 1
  • Cinnamon - 1 inch
  • Green chillies – 2 or 3
  • Fried gram – 2tbsp
Preparation 1

  • Grind all the raw ground paste with 1/2 cups of water to a smooth paste.
  • Heat the pressure cooker with oil and add bay leaf, onion, fry till transparent, then add curry leaves, tomato and saute till tomato cook well and add the vegetable’s, saute for 2 to 3 mins.
  • Now add the ground masala paste, cook on low flame for 5 mins.
  • Finally, add 1/2 cup water, salt and mix well. Close the lid and allow for 3 whistle. After pressure released open the lid and sprinkle few coriander leaves and serve.
  • Ready to serve Mixed Vegetable Kurma with idly, dosa, poori and chappathi.
Preparation 2

  • Follow the above ingredient, instead of green chilli, add
  • Chilli powder -1tbsp
  • Coriander powder – 1 1/2tbsp
  • Turmeric powder -1tsp
  • Small onion – 3-4    , to the raw ground paste mixture and grind, after saute tomato, add few mint leaves and follow the above steps and taste the unique taste of Mixed Vegetable Kurma - Korma recipes.
